Teen Chef Program


South East had it's first ever "Teen Chef" program yesterday and it was a success! We made Garden Salad with Citrus Vinaigrette. In this program we want to keep it healthy and for the first class we decided to keep it easy. We worked on a couple of different skills.


First we chopped up all our vegetables including lettuce, tomatoes, cucumbers and bell peppers. Each participant go their own cutting board, lettuce knife and salad bowl because we are working on independence in the kitchen.


After all the vegetables were cut up we worked on our vinaigrette. We squeezed our oranges, lemons and grapefruits by hand.


Then we carefully poured the juice into our vinaigrette bowls. After that we added the other ingredients including rice wine vinegar, extra virgin olive oil, salt and zest from our citrus.


Next we whisked all of our vinaigrette ingredients together and poured it all over our salad. The smell of citrus was all around us, yum!


Finally we grated our fresh asiago cheese to top off our salad along with seasoned croutons for a crunch. 


And last but certainly not least we got to taste a little of our hard work and the feedback was very good! The rest of the salad our teen chefs got to take home to enjoy with their families.

SEC at Yankee Stadium

On Sunday, September 7th, South East Consortium took a special trip to see the NY Yankees take on the Kansas City Royals at the stadium.  18 Participants boarded the Yankee Clipper in Scarsdale to get to the stadium.  

Once at the stadium we enjoyed a BBQ Lunch on the Malibu Rooftop Deck followed by a special ceremony honoring Yankee’s Captain, Derek Jeter.  South East Consortium was also welcomed on the Board by the NY Yankees twice!!!  

Participants got to enjoyed ice cream in souvenir helmet cups and commemorative coins were given out by the Yankees celebrating the legacy of Derek Jeter.

Bridgeport Bluefish Summer Game


On a beautiful Summer Saturday SEC headed up to Bridgeport, Connecticut to watch the Bridgeport Bluefish take on the Somerset Patriots.  While the outcome was not what we had hoped, it was not for a lack of cheering from our seats.  We soaked up the sun at the ballgame, enjoying good food and good friends while rooting for the Bluefish.  After the game, we surveyed the souvenir shop and had a photo shoot with the mascot.  It was a memorable day that was enjoyed by all!

Luau 2014


Our end of the summer beach party was another great success! The evening was filled with dancing, volleyball, hanging out with friends and some yummy BBQ food. Everyone in attendance had a great time and it was the perfect way to end our summer camp and summer programs. We look forward to seeing you all in the Fall!

Dorney Park and Wildwater Kingdom Trip


On Saturday, July 26th the South East Consortium visited Dorney Park and Wildwater Kingdom in Allentown, PA. on a day trip.  We spent the day riding rides such as: Steel Force, Scrambler, Sea Dragon, Road Rally and ate lunch at Subway in the park.  Then we hung out in the Wildwater River,  Wave Pool and road the Speed Slides at the water park.  South East had a blast! City Of Water Day Festival


For our first trip of the summer South East Consortium took a group to City of Water Day on Governors Island. It was a beautiful day outside and the site from the island looking back on Manhattan was truly breathtaking! 

We took a couple forms of transportation to get where we were going (Metro North, shuttle, subway, ferry) and every step along the way was an adventure. On the train into Grand Central Terminal we got to spend some time with one of the coolest conductors we ever met! He told us stories, made us laugh and spend some quality time with our participants.
Once we got onto the island we checked out the sites and eventually found a great spot on the island to have lunch. After lunch some of us went out and got to explore the island while others relaxed on the lawn to enjoy the live music and all the site and sounds of the festival.

The process of getting home was even more of an adventure then getting to the island. Our subway was canceled and we had to regroup and walk a couple blocks to catch another subway. We all took it in stride and made the best of the situation, when your commuting in NYC you have to learn to go with the flow!

End of the Year BBQ 2014



Last Friday, June 20th we said goodbye to Spring and hello to Summer with our annual "End of the Year BBQ".  We celebrated the end of the season with our South East friends at the Veterans Memorial Park in Harrison. 

We had great food and fun activities! With all the BBQ fixing such as hot-dogs, hamburgers and potato salad, no one went home hungry. Out on the field we have a game of kick ball going along with volley ball, badminton and a bean bag toss. Some of the participants even made up some games of their own, it was a fun evening!
